“I am so happy
to finally share this goofy little project with you! You may know that I hail
from a brewing ancestry, and I do love beer and particularly IPAs. Inspired by
colleagues in the cider world, I wondered if we could infuse a Sauvignon Blanc
with hops, creating a hybrid that had the hoppy aromatics I love without adding
hop bitterness to the wine. Experiment after experiment with different kinds of
hops (Glacier and Galaxy won), how long to leave them in the wine and aging
trials to see if the aromatics would remain have resulted in this first batch
of a truly unique (ok, geeky) wine. It does have that hoppy nose, along with
honeycomb and tangerine. Citrusy lemongrass, a bit of a resinous texture and
hints of hay round out the profile. We’re going to make more!”
